Different sources of glucosinolates and their derivatives

Abstract

Glucosinolates are a distinctive group of secondary bioactives with their significant role both in plant defense system and human health. Consumption of cruciferous vegetables is highly recommended due to their recently revealed benefits on health. Research on glucosinolates is very dynamically and interdisciplinary ongoing, and there are numerous comprehensive studies and reviews having different approaches on those compounds. Therefore, in this chapter, it is aimed to give a general point of view for the structure in addition to mentioning some different and less common sources of glucosinolates. In addition, contribution to current knowledge on the glucosinolates by summarizing some recent applications and methods to increase the glucosinolates in selected plants and valorization of glucosinolate-rich by-products is also emphasized.
